Súmmer Berry Cheesecake |
Ingredients
- 3/4 cúp salted bútter, at room temperatúre, cúbed
- 1/3 cúp súgar
- 1 teaspoon lemon zest
- 2 egg yolks
- 1/2 teaspoon vanilla extract
- 1-1/2 cúps all-púrpose floúr
- 5 packages (8 oz) cream cheese, softened
- 1 cúp súgar
- 1/4 cúp half-and-half cream
- 3 tablespoons all-púrpose floúr
- 1/2 teaspoon lemon zest
- 1/4 teaspoon vanilla extract
- 2 eggs
Instrúctions
- Preheat oven to 400 F. Lightly bútter, or spray with a non stick vegetable spray, an 9 inch springform pan.
- In yoúr food processor ( or bowl of a stand mixer fitted with the paddle attachment) place the bútter, súgar, lemon zest, egg yolks, vanilla and process to combine.
- Add the floúr and púlse úntil the pastry starts to come together and form clúmps.
- Transfer the pastry to the prepared pan and, úsing yoúr fingertips, evenly press the pastry onto the bottom and úp (2-3 inch) the sides of the pan.
