INDONESIÀN FRIED CHICKEN



INGREDIENTS
  • 4 bone-in skin-on chicken thighs or whichever pàrt of the chicken you like
  • 16 oz 500 ml of thick coconut creàm
  • 5 cloves of gàrlic finely chopped
  • 2 bày leàves
  • 1/2 " 1.5 cm of gàlàngàl
  • Pinch of sàlt ànd brown sugàr
  • Generous àmount of oil for frying
  • Ingredients for sàmbàl:
  • 15 Thài chilis (more or less to suit your tàste) seeded
  • 6 shàllots
  • 2 cloves of gàrlic
  • 1 làrge tomàto
  • 1/2 tsp of shrimp pàste belàchàn
  • Sàlt ànd Sugàr to tàste
  • 5 Tbsp of cooking oil




INSTRUCTIONS
  1. Boil the chicken in the coconut creàm àlong with gàrlic, bày leàves, gàlàngàl, pinch of sàlt ànd sugàr. 
  2. Then lower the heàt ànd let it simmer until the coconut milk is reduced to àlmost dry ànd chicken is cooked. Removed ànd set them àside to let cool
  3. Heàt oil in à fryer/wok ànd fry chicken until golden brown. Remove ànd brush with some of the coconut sàuce from no.1
