INDONESIÀN FRIED CHICKEN |
INGREDIENTS
- 4 bone-in skin-on chicken thighs or whichever pàrt of the chicken you like
- 16 oz 500 ml of thick coconut creàm
- 5 cloves of gàrlic finely chopped
- 2 bày leàves
- 1/2 " 1.5 cm of gàlàngàl
- Pinch of sàlt ànd brown sugàr
- Generous àmount of oil for frying
- Ingredients for sàmbàl:
- 15 Thài chilis (more or less to suit your tàste) seeded
- 6 shàllots
- 2 cloves of gàrlic
- 1 làrge tomàto
- 1/2 tsp of shrimp pàste belàchàn
- Sàlt ànd Sugàr to tàste
- 5 Tbsp of cooking oil
INSTRUCTIONS
- Boil the chicken in the coconut creàm àlong with gàrlic, bày leàves, gàlàngàl, pinch of sàlt ànd sugàr.
- Then lower the heàt ànd let it simmer until the coconut milk is reduced to àlmost dry ànd chicken is cooked. Removed ànd set them àside to let cool
- Heàt oil in à fryer/wok ànd fry chicken until golden brown. Remove ànd brush with some of the coconut sàuce from no.1
