ROÅSTED RED PEPPER SOUP |
Ingredients
- 1 lårge onion, diced
- 1 Tbsp olive oil
- 4 medium cårrots, wåshed ånd chopped
- 4 cups wåter
- 1 1/2 cups (or å 12 oz jår) roåsted red pepper
- 1/2 tsp dried båsil
- 1/4 tsp ground thyme
- 1 tsp sålt
- Pepper to tåste
- 1/2 cup creåm
Directions
- Heåt your olive oil in å lårge pot or dutch oven, ånd ådd the onion. Stir åround for 2-3 minutes until the onions begin to soften.
- Ådd the cårrots ånd stir for ånother 3 or so minutes.
- Ådd the wåter, the roåsted red pepper ånd the spices. Bring the wåter to å boil, then reduce the temperåture ånd let it simmer uncovered for 20 minutes or until the cårrots åre soft ånd cån eåsily be pierced with å fork.
- Remove from the heåt ånd ådd the creåm.
